Honey dew, green tea and mint granita

  • 1c water
  • ¾ sugar
  • ¼ c picked mint leaves
  • 4 green tea bags
  • 1 large honey dew, peeled and seeded
  • Midori liquor optional


Step 1

In a pot combine sugar and water and bring to boil until sugar dissolves, remove from heat and add tea bags and mint, remove after 10 mins and allow to cool.

Step 2

Puree honey dew and cooled syrup in a blender. If using add Midori to flavour.
Place in a shallow, lined metal dish and place in freezer. After 30 min stir using a fork and continue every 30 mins until granita is frozen ice crystals.

Step 3

Serve in glasses over vanilla ice cream, garnished with mint leaves.
